Vegan Baghar Cabbage

Extremely low in calories, vegan, and aromatically flavorful, this classic Indian side dish takes the humble cabbage to new heights. Plus, it takes almost no time to cook by the use of pre-packaged coleslaw mix. See below to learn what baghar means.


Vegan Baghar Cabbage

Ingredients

  • 1.5 Tbs. mustard oil

  • 1 tsp. nigella seeds

  • 1 tsp. brown mustard seeds

  • 1/2 onion, chopped

  • 1/2 Tbs. ginger & garlic paste

  • 1-16 oz. pkg. coleslaw mix

  • 1/4 tsp. salt (to taste)

  • 1/2 tsp. ground cumin

Method

  1. Heat a pan on medium high, add mustard oil and wait till it smokes (about 5 mins.) Add the nigella and brown mustard seeds. Wait til they sputter & pop (about 2 mins.)

  2. Add chopped onions and fry until soft. Add garlic and ginger paste and fry for a few more minutes.

  3. Add the entire bag of coleslaw mix. Mix together. Add salt.

  4. Fry the cabbage for a few minutes until soft. Add cumin and fry some more until desired texture.

  5. Enjoy with a paratha and achaar.


What is Baghar?

Pronounced bug-haar, this is a method in Indian cooking where spices and herbs are added to hot oil and the tempering is either done as the first step in the cooking process (before adding the vegetables for example), or as the last (pouring the tempered oil over a cooked dish). The oil extracts and retains all the aromatic flavors of the spices and flavors the entire dish.
